My homemade take on Jollibee’s Burger Steak Supreme, made with a juicy beef patty, crispy homemade fries and a rich black pepper mushroom sauce. Served with rice and a fried egg, this Jollibee-inspired comfort food is my answer to the ultimate food “what if?”
In a bowl, add your breadcrumbs and milk, then mix until you form a paste. Make sure the breadcrumbs are fully soaked in the milk. This is your panade!
I absolutely love including panade in my beef patties! I hate it when my patty shrinks, and this helps decrease the shrinkage. It also provides moisture, which is especially helpful when you’re using lean beef.
Put your ground beef, salt, pepper, and soy sauce into the same bowl, then massage everything into the meat until well combined.
Divide your beef into four equal portions and shape each one into a ball. Lightly flatten each ball with your palm until you get a disc shape that is about 1 cm thick. Set them aside and let them sit for 30 minutes so the flavours can marinate into the meat.
Do not put them on top of each other, or they might stick together and you’ll have a hard time separating them when you start cooking your beef patties. You can either put parchment paper in between them or simply lay them side by side on a plate.
Over medium-high heat, add about 1 tbsp of oil. Once the oil is hot, lay one patty in the pan and gently press down on it for 30 seconds to make sure you get an even sear. Lightly lift it to check if a crust has formed, then flip it and do the same on the other side.
Don’t press on it for too long while cooking, as it might dry out the meat.
Finish cooking all your patties and let them vibe on the side.
Black Pepper Mushroom Sauce
In the same pan where you cooked your beef patties, add your diced shallots and sauté until fragrant over medium heat.
NOTE: There should be enough oil in your pan - around 1 tbsp. If not, feel free to add more!
Add in your mushrooms, salt, beef bouillon, and black pepper, then cook until the mushrooms turn brown.
Pour in your broth and heavy cream, then continuously stir until the liquid evaporates and the sauce thickens.
Be patient with this step! It will take some time, but it’s okay - the longer you cook it, the more the flavours become concentrated.
TIP: Once your sauce can fully coat the back of your spoon without running off, your sauce is ready!
You can taste the sauce and add salt to taste.
Turn off the heat and add 1 tbsp of cold butter, then mix. Once the butter has melted into your sauce, let it rest for 5 minutes.
Fries
I prefer my fries slightly thin, but feel free to cut them however you want!
Once you cut your fries, you will need to wash them to remove excess starch (similar to rice), then let them soak for at least 30 minutes in cold water.
Very important - make sure to dry them with a kitchen towel before frying to avoid any splatter!
Water and oil do not mix (I found out the hard way), so make sure to thoroughly dry them to avoid any unwanted accidents!
Heat your oil for deep-frying over medium-high heat (about 350–375°F).
Carefully place your dried potatoes into the oil. Make sure not to crowd your pan, and move the potatoes around so they don’t stick together.
Once they are golden brown, remove them and let them rest. Generously sprinkle some salt on top while they’re still hot!
Assembly time! Finally! Lol On a plate, put your fries and place the cooked beef patty on top. Generously pour some sauce over it and garnish with fried garlic (optional). Eat it with rice and a fried egg, and enjoy your Burger Steak Supreme à la Kat!
